Rhubarb Bars shortbread

Ingredients

shortbread:
- 1 c. flour
- 1/2 c. butter
- 5 tbsp. sugar
topping:
- 2 eggs
- 1/2 c .brown sugar
- 1/4 c. flour
- 3/4 tsp. salt
- 1 c. stewed rhubarb

Instructions

350 deg F
mix shortbread ingredients and pack into a 9 in sq pan. Bake for 15 mins.
Whisk eggs, brown sugar, flour and salt then stir in rhubarb. Put on top of cooked shortbread and bake for 40 mins until rhubarb mixture is set. Let cool for 10 mins.
